The best villain I can recall was a xenophobic super-paladin that I made for a fantasy RP a year or two back
He was fun

A speck of dust that attacks you 1 damage per turn. It's immune to any attacks unless the sun falls out of the sky and obliterates the earth. Due to it being such an op enemy, you must roll a 21 on a d20 in one roll. This enemy can phase through objects.
